Easy low fat pineapple dessert with and Greek yogurt and a rasberry layer
A pineapple dessert to treat your immune system!
Even delicious desserts can be a great opportunity to increase our vitamin and mineral intake in order to support our immune system functions and protect our health. This super easy pineapple dessert with rasberries is a micronutrient, protein and soluble fibre bomb, ideal for fruit lovers!
- I have used fresh fruit, but you can definitely use frozen or tinned fruit. Just make sure there is no added sugar!
- Coconut yogurt is a delicious vegan/dairy free alternative.
- This dessert contains 16g protein/ portion and it is an ideal post-workout snack!
- It i has a low glycaemic index (19) and low glycaemic load (7.8)
- Each portion contains 9g fibre (36% RI).

Healthy layered pineapple dessert with greek yogurt and rasberries
Pinapple and fat-free Greek yogurt cream with a rasberry layer,
Equipment
- food processor
- 2 bowls/containers
Ingredients
- 150 grams fat free Greek yogurt
- 100 grams fresh pineapple chunks
- 100 grams fresh rasberries
- 1 tsp vanilla syrup without added sugar (sweet freedom vanilla syrup)
- 1 tsp vanilla extract
- 1 tbsp granulated sweetener
- 1/2 tsp lemon extract
Instructions
- Wash the rasperries and pineapple chunks.
- Add the pineapple, granulated sweetener, vanilla extract and lemon extract in the food processor.
- Turn on the food processor and mix for approximately two minutes until smooth.
- Add the Greek yogurt in the food processor and mix for another minute. Add the pineapple-yogurt cream to a bowl.
- Rinse the food processor parts well. Add the rasberries and vanilla syrup, turn on the food processor and mix for a minute.
- Take your serving bowl and add a thick layer of greek yogurt-pineapple cream. Add the rasberry layer on top. You can actually serve the rasberry and pineapple cream layers as you wish!
