Greek Coconut truffles

Let’s make Greek-style coconut truffles from scratch! You will only need four ingredients: desiccated coconut, eggs, granulated sweetener or sugar, and vanilla bean paste. The raw dough is very sticky, so let’s see a couple of tricks to make your life easier.

Beginner’s Tips to make Greek coconut truffles:

  • Use a wooden spoon to swipe the sticky dough from your container’s edges. Wet your spoon with tap water if the dough is stuck. This trick will help you to avoid wasting product.
  • When you pinch the dough to make the truffles, wear disposable gloves and keep them wet. Or keep your hands moist.
  • Do not open the oven door to check on the coconut truffles, especially in the early minutes of the baking. The truffles may crack!

Greek coconut truffles

Greek coconut truffles, but I have used sweetener instead of sugar. A very filling & high fibre dessert, you can also have it for breakfast!

Equipment

  • oven
  • cooking tray
  • large mixing container
  • cooking paper
  • wooden spoon

Ingredients
  

  • 100 grams desiccated coconut
  • 75 grams granulated sweetener (I used 1 pack of Tesco low calorie granulated sweetener)
  • 1 large egg (raw)
  • 1/2 tsp vanilla paste

Instructions
 

  • In the mixing container add the sweetener, the egg and the vanilla paste and mix until smooth.

  • Gradually add the coconut and mix until smooth.

  • Put a piece of cooking paper on the oven tray. Pinch off pieces of the mixture to roll into 6 round truffles. Make sure the truffles are very firm.

  • Put the tray in the oven and set the temperature to 130 degrees C.
  • After 30 minutes turn the heat off and remove the truffles from the oven. Let them rest for 5 minutes and then slowly separate the truffles from the cooking paper using a spoon or spatula.

Notes

PS: I’ve made this recipe many times before, but this time the truffles were way too good!
I am not 100% sure why, but I think it’s because the sweetener I used this time had a very powdery consistency! 🙂
