How to make feta cheese oatcookies
Good evening and happy Thanksgiving to everyone who celebrates it! I hope you are all safe and sound. Even though we are through an extremely challenging year, it is still Christmas season and holiday treats can cheer everyone up! Christmas snacks are usually sweet, so today I made feta cheese oatcookies; savoury, gluten free and very easy to make. Again, feta cheese is proven to be one of the most useful multi-purpose igredients! Feta is also naturally salty, so you dont need to add extra salt on top. Oat flour is not frequently found at the grocery stores, but it can be made of oats with a food processor within seconds! Thus, baking with oat flour can be convinient because oats are a staple food in many households and it is also a very healthy alternative to white flour regarding micronutrient intake and fibre content!
A few recipe tips before we start!
- If you need to be sure the recipe is completely gluten free, choose gluten free oats and gluten free baking powder! Oats are naturally gluten free, but there is a risk of cross-contamination unless they are labelled as gluten- free.
- The dough is very firm, so feel free to use your cookies before baking!
- Choose either the conventional heating setting of your oven or the fan setting! The heat will be evenly distributed and the oatcookies will be extra crispy.
- The oatcookies taste amazing when they are hot and in room temperature!
- It would be better to store t the cookies in a sealed container or food bag if they are not consumed within a day.
- You could add dried oregano instead of dried basil! It will taste great as well!

Easy feta cheese oatcookies
Equipment
- food processor
- oven tray
- cooking paper
- oven with fan setting or conventional heating setting
Ingredients
- 100 grams crambled feta cheese
- 60 grams oat flour optionally made of gluten free oats optionally made of gluten free oats
- 1/2 tsp baking powder
- 1 tbsp olive oil
- 1 large beaten egg
- 1 tsp dried basil
- 2 pinches ground pepper
Instructions
- If you don't have oat flour, add 3/4 cup of oats in the food processor. Turn it on and blend for 20 seconds. Then, move the oat flour to a separate bowl, mix with the baking soda and set aside.
- In the food processor add the beaten egg, dried basil and olive oil. Turn it on and blend for 20 seconds.
- Add the crambled feta cheese in the food processor too and blend for 20-30 seconds (until smooth.
- Gradually the add the oat flour/ baking powder blend to the mixture. Keep mixing with a spoon until smooth.
- Start preheating the oven to 150 degrees C (fan or conventional heating setting).
- Put a piece of cooking paper on the oven tray. Pinch off pieces of the mixture, roll into balls and flatten the dough with your palm until the cookies are 0.5- 1 cm thick. Now it is time to use your cookie cutters if you wish!
- Put the tray in the preheated oven and maintain the temperature to 150 degrees C.
- After 40 minutes turn the heat off and remove the oat cookies from the oven. Wait for 5-10 minutes and you are ready to serve!
