How to make vegan truffles with prunes and matcha chocolate

Homemade vegan truffles from scratch! Firm, ready in 10 minutes and super easy to make. The truffles can also be gluten free if you choose gluten-free oats and chocolate. Lovely low energy snack and ideal for midnight sweet cravings!

Create your own variations!

  • You can experiment with more chocolate flavours. If you are not interested in keeping the tuffles vegan, you can add white chocolate and you will not be dissapointed!
  • Try different combinations of dried fruit and healthy wholegrain cereals. It’s a great way to add more fibre to your snacks and you may create a masterpiece!
  • You can coat with matcha powder. The truffles are firm and sticky thanks to the dried prunes, so coating with powder wil be easy!
  • You can use the same igredients to make an amazing oatmeal! Just add more water and chill in the fridge overnight. If you make two servings, each serving will contain 143 kcal and 23g of net carbohydrates.

Easy vegan truffles with prunes and white matcha chocolate

Four- igredient vegan truffles, ready in 10 minutes. You can optionally chill for 20 minutes before serving.

Equipment

  • food processor
  • thin wall food container with lid
  • cooking paper

Ingredients
  

  • 3 tbsp oats (30g)
  • 30 g soft prunes, pitted, ready-to-eat, semi-dried (4 pieces)
  • 1/2 tsp lemon extract
  • 20 g white matcha lemon chocolate
  • 3 tbsp tap water

Instructions
 

  • Add the oats in the food processor. Turn it on and blend for 10 seconds.
  • Add the rest of the igredients in the food processor. Turn it on and blend for 20 seconds.

  • Put a piece of cooking paper on your working surface or in a food container. Pinch off small pieces of the mixture and roll into balls.
  • The truffles are ready. You can eat them on the spot or chill them in a food container for 20 minutes. Put a piece of cooking paper in the container, if you haven't already.
  • Store the truffles in the fridge!
